Ingredients:
1. Tomatoes- ¾ cup (marinated in lightly salted olive oil with herbs/unseasoned scatter some salt, sun dried finely diced)
2. White wine vinegar- 2 tbsp
3. Tomatoes (medium sized) - 2 (chopped)
4. Extra virgin olive oil- 2 tbsp
5. Brie cheese- 1 pound (sliced)
6. Fresh basil leaves- 1 cup
7. Long Italian bread- 2 loafs
Direction:
• Take a small sized bowl & pour together olive oil along with the vinegar & dried tomatoes.
• Take the Italian bread & horizontally chop it into half.
• Uniformly place the olive mixture over the cut portion of the bread.
• At the bottom halves put the brie on both of the loaves.
• Now place the basil leaves & tomatoes over the top.
• Place the half on the top & wrap it in a plastic wrap & place it in your refrigerator if you are not serving the sandwich right now.
