Ingredients:

1.    Garlic- ¼ cup (diced)
2.    Celery- ½ cup (minced)
3.    Cherry tomato- 1 cup (halved)
4.    Carrot- ½ cup (diced)


5.    Escarole- 1 head (chopped)
6.    Freshly ground pepper- ½ tsp
7.    Cannelloni beanes- 15 ounce
8.    Italian seasoning- 2 tbsp or oregano along with the diced fresh basil 1 tbsp each
9.    Chicken broth (sodium reduced)/ vegetable broth- 14 ounce
10.    Parmesan/ Asiago / Romano cheese- ½ cup (freshly shredded)

Direction:

•    In your Dutch oven heat oil over medium temperature.
•    Pour the pepper along with the carrot, tomatoes, Italian seasoning, onion, garlic & celery.
•    Allow it to cook well till the vegetables become softer (for almost 10 minutes) & remember to stir frequently.
•    Now pour the broth & let it simmer.
•    Stir occasionally till the vegetables get the tender texture.
•    Add the escarole along with the beans & stir well again.
•    Allow it to cook for almost 5-8 minutes, till the escarole turns tender.
•    Scatter the shredded cheese over the top & serve.
