Ingredients:

1.    Scallions: 4 (sliced finely)
2.    Eggs (large sized) - 4
3.    Salt - According to taste
4.    Milk - (fat free) - 1 ½ cup


5.    Cheddar cheese (fat reduced) - 1 cup (shredded)
6.    Egg while - 6 (large sized)
7.    Green chillies (minced) - 2 (drained & dried well)
8.    Frozen corn- ¾ cup (thawed & dried)

Direction:

•    At 400 degree F preheat the oven.
•    Arrange heatproof ramekins of 6 or 10 ounce with cooking spray & put it over baking sheet.
•    Evenly distribute the corn along with the scallions & green chillies among the ramekins.
•    Sprinkle the shredded cheese over the top.
•    Take a medium sized bowl & beat together egg whites along with the milk, salt & eggs. Beat well till you get them combined perfectly.
•    Now distribute the milk mixture among the ramekins.
•    Allow the mini casseroles to bake till the top turns brown in colour & eggs are firmly set (for 10 ounce it will be almost 35 minutes & for 6 ounce it should be 25 minutes).
