Gluten is the protein portion of rye as well as of most variants of oats, wheat, barley etc. It can create problems in ratatouille1your digestive system. Ingredients:

1.    Garlic clove- 1 (diced)
2.    Shallot (large sized) - 2 (chop into ½ inch pieces)
3.    Eggplant – ½ (don’t remove the skin & chop into ½ inch portion)
4.    Olive oil- 3 tbsp


5.    Salt- According to taste
6.    Basil leaves (fresh) - ¼ cup (finely chopped)
7.    Dry red wine- ¼ cup
8.    Ground black pepper- As per taste
9.    Zucchini- 2 (chop into ½ inch pieces)
10.    Bell pepper (yellow, small sized) - ½ (don’t remove the seeds & chop into ½ inch portions)
11.    Ripe plum tomatoes- 1 pound (chop into ½ inch pieces)
12.    Red bell pepper (small sized) - ½ (seeded & chop into ½ inch portion)

Direction:

•    Take a medium size saucepan & heat oil over the medium temperature.
•    Pour the chopped garlic along with the shallots & stir well for almost 2-3 minutes (till you get the tender texture).
•    Now add the bell peppers with eggplant & zucchini.
•    Stir well occasionally for another few minutes.
•    Then pour the tomatoes & red wine.
•    Stir well & allow it to cook for almost 8-10 minutes (till the tomatoes turn soft).
•    Use the black pepper & salt for seasoning.
•    Take it off from the oven & sprinkle the chopped basil leaves.
•    Stir well & serve hot.
