Ingredients:

•    Curry paste (thai yellow) - 1 tbsp
•    Garlic clove- 2 (chopped)
•    Canola oil- 1-2 tbsp
•    Coconut milk- 14 ounce


•    Eggplant (medium sized) - 1 (chopped into ½ inch cubes)
•    Lime juice- 3 tbsp
•    Fresh basil- ½ cup (diced)
•    Sugar snap peas- 2 cup (trimmed)
•    Fish sauce- 1 tsp
•    Salmon fillet (skinned) - 1 pound (chopped into 1 inch pieces)
•    Light brown sugar- 1 tbsp

Direction:

•    Take a large sized skillet & heat oil on the medium temperature.
•    Pour the garlic along with the curry paste & stir well till you get the aroma (for almost a minute).
•    Now pour the eggplant & allow it to cook until you get well coated with the mixture (for almost 2-3 minutes).
•    Pour the brown sugar as well as coconut milk & fish sauce.
•    Let it boil & add the snow peas along with the salmon.
•    Lower the heat & allow it to simmer.
•    Cover the skillet (remember to stir occasionally) & let it cook till the salmon cooks well & the peas get the tender texture (for almost 5-6 minutes).
•    Take it off from the oven & add the lime juice along with the basil.
•    Stir well & serve.
